cajun shrimp alfredo

What you will need:

Shrimp
Peppers
Broccoli
Bertolli Alfredo Sauce
Paprika
Crushed Red Peppers
Seasonings of your choice
Penne Noodles

Time to Complete: 30 minutes

Here are the steps to making the amazing Cajun Shrimp Alfredo

- Boil Penne Noodles in Water for 25 minutes (make sure to add 1/3 teaspoon of oil and a pinch of salt)

- Steam Broccoli in water with seasoning of your choice (we love Italian medley)

-Add crushed Red Pepper + Paprika to the sauce (stir until evenly distributed)

- Season Shrimp with Peppers + Seasonings of your choice

- Cook Shrimp + Peppers for about 10 – 15 minutes

- When Noodles are done, rinse them under cold water for 1 – 2 minutes (so they won’t stick together)

- Add the Penne Noodles, Broccoli, and Cajun Bertolli Sauce to the Shrimp and Peppers then stir continuously until the sauce and penne noodles are evenly distributed.

Then EAT

what an amazing weekend with my husband, it began with him sending me edible arrangements to our home, then he took me out to purchase my new DSLR camera, and then he had a full day of activities for me this Sunday! Here are some of the photos of our Sunday afternoon.

tis’ the season for snow

20121127-095959.jpgtis’ the season for snow, but not here in hawaii we still waking up to sunshine and palm trees. although it is amazingly beautiful, i could use a little snow to go with my early morning hot chocolate and whip creme. mentally my mind hasn’t grasped the whole concept of a hot christmas day where we can just head over to the beach for a nice wave or jump in the nearest pool for a swim. so to get into the christmas spirit this year we will be listing to christmas carols, lighting our monterey pine and winter curant soy candles, and watching christmas movies! with A Christmas Story being my absolute favorite movie, excited even more because my husband has never seen it!

love even when its hard…

on our wedding day we are all in la-la land standing at the alter visioning what our life would be like in the days, months and years to come. it seems blissful, but does it ever occur to you that there will be bad days? days where you two may not see eye to eye?  yeah, you will have those days, but the question is will you still love the same? speak the same? feel the same? I’ve learned with only being married a year and 3 months today, that loving someone isn’t truly a test until you learn to love them even when its hard to.

shrimp scampi + garlic rice

20121118-110802.jpga meal that can be conquered in less than 15 minutes, that way husband is happy and you feel like the chef of the world. not to mention is is deliciously-delicious!

what you will need for shrimp scampi:

1 pound shrimp, peeled and deveined

1 cup white wine or water (your choice)

1/2 cup unsalted butter, or a stick of butter (not too much, we don’t want high cholesterol now!)

freshly squeezed lemon juice or lemon pepper seasoning

3 teaspoons of finely chopped parsley leaves

2 teaspoons of minced garlic

Heat a large skillet over medium heat to prepare your seasoning: first add water, then add the stick of butter and stir continuously for about 1-2 mins until it slightly thickens.

you then add your minced garlic, freshly squeezed lemon juice, and parsley leaves.

Heat a large skillet over medium heat then add shrimp, season the shrimp to your liking (i.e: salt and pepper) cook for about 5-6 minutes then proceed to pour the mixed seasoning into the skillet with the shrimp.

within 2-3 mins you will have shrimp scampi!

Garlic Rice this recipe I received from an amazing friend Hazel Alde

Again, Heat a large skillet over medium heat to prepare your seasoning, add a stick of butter or a 1/2 cup of butter to the skillet and minced garlic.

Scramble 1 egg

Prepare your rice in the rice cooker.

After the rice is prepared pour the melted butter and minced garlic over the rice and stir continuously until evenly distributed, then add the scrambled egg to your skillet.

If necessary, add Garlic Salt to Finish the Garlic Rice.

Add the shrimp to the rice if you want, or serve separately.

Then Serve to your lovely husband or beautiful family .
